I've driven the pre-facelift STi, and own an '04 WRX which is my daily driver, and so although I can't make a direct comparison between your '08 STi and the 370z (I have an '09 with the sport package and 6 speed manual transmission), there are obvious differences between the Subie and the Z. Biggest thing that I notice is the improved low end torque on the Z and the lack of turbo lag, as well as the fact that the brakes on the Z on just head and shoulders above those on the WRX. Given your mods and the fact that you're comparing the STi these are probably not going to be as noticeable. The Z does drive like a smaller car though, and I'm sure that will be your assessment as well. I've made some upgrades to the WRX, but going to 17 inch rims with Bridgestone RE070 tires has done wonders to improve grip, steering feel and cut down on understeer vs the all seasons the car came with. Gotta say though, I enjoy both cars, and the WRX has been very reliable.
