Stoptech Rotors, Hawk Pads, CZP Brake Lines, >>

It's been awhile since I've run a drilled or slotted disc, I cant remember, but do these generate a lot more brake dust then stock rotors?? They sure look great

Slightly, but I would recommend using Hawk HPS pads, and you'll be very satisfied with the low brake dust they release.

I'm pretty happy with the stock pads, the performance is good, for what I do, and the dust is very low. At least in comparison to my Mini Cooper S. Of course it has black rims, so that doesn't help. I plan on getting black wheels or powder coating the 370z Rays wheels, is why I'm concerned.

Would someone notice a difference with slotted and drilled rotors with a stock brake system? Or are they more for looks?

If you are not using it for severe applications, you can go with any personal preference. Most race applications prefer blank or slotted, drilled rotors are susceptible to crack under a long period of severe usage.
