That's what it's going to come down to. It's not all that simple though, they're likely to be SMD LEDs on a printed circuit board, likely in a permanently sealed enclosure... It's a big project.

The biggest thing is taking the dash apart - I think you have a lot to remove to get to them. But I don't believe they're sealed up, and they're not too difficult to remove with the right tools. Digi did a DIY and replaced every LED in his car IIRC.

Or just take a dab of black silicone and put it on top of the LED. That way you dont even have to touch the board and it should black out if not almost completely keep the light from getting out.
