That dyno operator should get flowers and a thank you card.

Always get a baseline. Other than that your always gonna get folks hating on your numbers. If possible save a little extra for dyno pulls after any new part install.

07 350z - 264.5whp 234.7wtq - Dynapack

here you guys go. He said I did relatively well in respect to the other G's that he dynoed with the similar mods. He said they made around ~320-325. However, I am running pretty damn lean, but it doesn't show on the graph. The torque curve is horrible though, but I'm getting a tune soon.

I havent gotten it on a dyno yet. I have the Stillen G3 intake, HKS HI POWER TI, and GTM resonated test pipes. I should be somewhere in the neighborhood of 310-320whp depending on the dyno. A mustang dyno might put me at just 290 or so. Each dyno is different.

that's why a baseline dyno is crucial

Also dynoing on the same dyno keeps the gains you see somewhat factual.

I think we've all got 300rwhp on the right dyno in the right weather. Dynos vary so much that absolute numbers are virtually meaningless for comparison between different cars/dynos/regions. Before/after on your own car is useful, but even then I've recently been psyched out by weather changes making a larger difference than mods.

Here's a calculator, play with the numbers yourself. Between two dyno runs at the same location many months apart (different seasons), this calculator claimed that conditions accounted for a ~15hp difference in my car's dyno runs:

Dyno Correction Factor Calculator

Then you add in the fact that different dyno brands use different physics methods for measuring torque, some dyno charts use SAE correction and some don't, some mfgs are just known to read higher or lower, some dyno shops adjust their machines higher or lower, or simply fail to calibrate regularly at all and just let it drift over time.... I could go on.
