Aside from the risks when everything is working flawlessly (just getting the tune and the shot right so that you don't destroy stuff) there are so many risks from minor failures, hence all the safety devices like throttle switches, fuel pressure switches, window switches and all that jazz. It's just not great odds. Would I do it to a 70's musclecar rebuild project that I had a few grand in? Hell yes. My new 370Z? Hell no.
I'm inclined to agree with you on this one. I would only consider nitrous if I was staying NA and never going FI. If i was driving with twin snails and a 100 shot I'd be so nervous everytime the engine maybe even the slightest weird sound. Even staying NA, I would spare no expense to make sure the set up was as "bullet-proof" as possible.

I just like the idea of cheap, fast power, but we all know where that road often leads.
