Is safe to accelerate in D mode on 5,6,7 gears not harder as on stock car? There still is not clear for me (and for others to) if we can

There still is not clear for me (and for others to) if we can accelerate on 5,6,7 gears but not hard or not. Sometimes I drive on highways more then 200 km/h (125 mph) and I would like to accelerate from 0 to maximum speed i D (or DS) mode with transmission changing gears at 4-5k.
