You can't isolate these OEM gauges.
For the sake of cost and convenience you can mount 2 aftermarket gauges in the cubby panel or the A pillar.
You really don't need any more than 2 since, in reality, you won't be looking at them much anyway.
Jason Gale (PHUNK) on this forum offers custom units to accommodate the mod. His work is exemplary and he is EZ to communicate with.
I am aware of who is Jason Gale and his product, I wont wont knock the product because people seem to like it and it looks like good quality but I personally had a bad experience with him from a customer service perspective.

yikes ... sorry to hear that, Jason is a real good guy and has done right by me every time. Last project was a cubby panel conversion to accept the Motec C125.
Fine Fit, Great Communication, Looks and Works well

I'm not 100% on this, but I think the things that are adjusted through oil temp hijack can also be adjusted using the bluetooth module.

That being said, I left my triple gauge in so I wouldn't chance losing any features.

I installed the Defi BF gauges (Oil Pressure, Oil Temp, Water Temp... they look outstanding (minus the slight tint darker than the oem) I also bought and installed the Innovate ECB 1 for AFR, Boost, and e85.... Will match with a lighting color gel (LEE Gels Terry Red) Making a T-off to accommodate the pressure senders, and an inline take off on the oil cooler line should get the oil temp (within a margin of accuracy, until you tap the oil pan spacer... The oem temp sender should not be touched, so it can talk to the engine management and throw out accurate info to the ecu...

Would like to see a picture or your set up ...
I have the Defi Racer Tach and the Racer Boost Gauge both in blue.
Defi Gauges are Outstanding.

Here is the Motec C125 Data Logger ... this is mine, but was test fitted to another car - they were still working on the install of other gauges but sent me this pic for reference (I have replaced the OEM triple cluster with the Defi Boost, the Innovate Dual AFR, and the Innovate Methanol % / Fuel temp)
It combined the need for multiple gauges into one display.
