What he probably means is that the duty cycle on e85 cannot be compared directly to gas. Duty cycle will be correct for E85 since it's based on what your ECU is commanding the injector to do.

He explained that the calculations for the duty cycle will be off since we are using e85 and scaling it differently. My duty cycle is at 115%, which he explained it really isn't that high.

Yep, it's not going to be over 100% since that would mean it's continuously open.
If you're calculations say it needs 115% does that mean you should get bigger injectors?
