the problem with head room has to do with the length of your torso. that's why some guys that are 6'4" fit fine with a helmet, whereas i have a 1 finger gap between my head and the headliner at 6'2" with no helmet on (which means i'm screwed if i want to go to the track).
the z sits relatively low compared to most modern cars but i still consider it a high chair. my '92 acura integra's stock seat height sits just a few inches off the floor. my legs were practically straight. when i sat in my friend's nsx, that car was the definition of low seating to me. i felt like i was on the floor and it was great. there was actually more headroom than in the z. It also has what looks to be a bigger cabin space since its dash doesn't protrude out nearly as much as it does in the z. i find this incredible considering how small the nsx is compared to the size of our modern cars that are basically big, fat heavy cows. this picture should justify what i'm saying:

keep in mind that 350z next to it is lowered.

i think the only modern car that actually sits low, aside from supercars, is the lotus

6'5" 265 lbs (not fat), 36 in waist, 52 chest....I fit fine in the car overall but the seats make my legs go numb after a while from the hip flexor down to knees...would love to find more comfortable seats to swap out with stock ones. Always would be nice to get another inch or so in height and legs too, but not the priority...more about the comfort and no more numbness on trips to the beach.

To contribute to the thread, I may not be the biggest but maybe the heaviest. 6'0" 284lbs, 44 in waist, 54 in chest, and have never turned down a meal in my life. The seats are very comfortable for me. I have the steering wheel tilted up slightly. My seat is moved just about all the way back with a slight recline. It took me a very long time to find the perfect spot but I have taken an 8 hour drive one way with no pain in my legs or back and I'm on the other side of 40.
I was told by the dealer that this is a small mans car before my test drive but after owning a 240z and seeing how much room that small car has, I was determined to make it work, glad I did!

6' 185 lbs 30 inch waist. No issues at all. Very comfortable.

I can wear a helmet in mine and drive just fine. Im 6'2 -6'3 depending on what day it is and weigh in at 195. I have had bigger people than me in the driver seat before and they fit fine too... with a helmet. Hmmm.. you cant ghost ride the Z or lean back and pimp in it. Its a race car not a cadillac.

I will say that it seems easier to drive and be comfortable in a car that has touring

It's more about torso length than overall height. I'm only 6'1 but I have a long torso. Even after I scooch down my head is still pretty much touching or maybe a half-inch clearance. To add to this, due to the lack of a telescoping wheel I can't lean the seat back due to arm length! I'm sure I could make it work but my driving position would be far from optimal and the performance would suffer. At 6'1 with a long torso (and a bodyweight close to 400 lbs), I've got about the worst body type for sports cars but I've made it work. I spent ~10 years in a '95 Miata, 18 months in a 350Z and now about two months in the 370Z.

But any recommendations for aftermarket seats that might be more comfortable? or could an interiors shop pull the covers and adjust the padding?

Used to have the 370z Roadster, and those seats were awesome for holding you in, comfort was decent and room was decent.

Now have a 370z coupe with the base seats, you seem to sit higher in them, driving position is not as natural (as many reviewers have said) and well they don't support you in the turns. (I'm 195lbs and 6'1)

If I were to choose a pair of aftermarket, it'd be Recaro Sportster CS:

Honestly best seats I have sat in were ones that come with the Boss mustang (Recaro also)
