Will a SC 370Z be able to compete with a stock C6 Z06

No way can the z compete, it would have to be on a big diet, with major tire and suspension mods. Suspension, the Z06 puts the power down and powers out of corners better. In a straight line the gearing is much longer, that car just pulls and pulls.
