Well, my big chore for today was cancelled, so I did some digging through the FSMs. Here's what I found:
Referencing 2009 FSM SE-5, SE-8, SE-11, SE-23, SBC-10, SBC-16, and SRC-157, I see nothing that will affect vehicle operation (other than warning lights) if the seat connectors are unplugged. A visual inspection of my 2009 Touring (includes electric seat warmers) indicates that there is just one, "medium-sized" harness running from the console to each seat. These harnesses branch off under the seats to go to seat position/recline switch and such. My conclusion is that you can remove the console/seat harnesses, assuming the connectors in the console don't contain pins with other circuits (I can research that, but it's a PITA), but you will trip seatbelt, SRS, and maybe other alarms. If all else fails, there may be enough room in the console to allow you to tuck the harnesses in there. Disclaimer: I'm not an expert - check the FSMs or a qualified technician before performing any modifications.
