I look the like of a good matte protectant, but don't like the feel. I usually just use a quick detailer or wipe down the interior on a regular basis.

The "feel" will be subjective to each individual, however, you cannot go wrong with either 303 or Vinylex. I typically purchase Vinylex as you can find it locally; 303 is a bit harder to find, but when I do, I purchase a bottle. 303 produces a natural sheen; Vinylex adds a sheen. Your preference for a matte finish means you will probably like 303 better—both are top-shelf products.
