Default Rebuilt motor burning oil? Please help

My model is a '10 and had no burning oil issues before I had some warranty work done at a dealership this past July. Skipping the details, they told me they were going to give me a new motor since I had rod knock. They specifically said they ordered a new long block from Nissan, but screwed me and just opened up my motor and basically rebuilt it. I know this because the same stains that were on my motor before was still there after I got my car back.
Sometime in November, I did my routine Redline oil change in the driveway and noticed that only 3 quarts drained out. This freaked me out. I don't know if the technician didn't put enough oil or if that much oil has been burnt. So, I filled up a little more than 5.25 quarts, maybe 5.5. It read a little below the "H" on the dipstick. Note, this was in about 60F weather.
So tonight, I was checking my power steering fluid and it was reading noticeably below the Cold Min. which is probably due to the 18F weather out right now, fluid is still clear, and it's not leaking so that's probably not much of a problem (I haven't changed it since I got the car). I checked the oil dipstick after and it read very close to the "L" symbol. I then had my second freak out. I drove around for 20 minutes until the oil temp. read 200F. Parked in the driveway and the level read in the middle of the L and H.
Now my question is, is my motor actually burning oil and is in need of a real motor swap from Nissan? Or, is it burning oil because it's a rebuilt motor. I've read that new motors burn a little oil in the beginning, but does a rebuilt motor do the same? And if it does, how long is this supposed to persist for?
I am so worried right now, and feeling very reluctant to possibly go through the whole ordeal with trying to get warranty work done again.
Note: I got my car back with about 23,500 miles on the odomotor. It's now reading just below 30,000.
Thank you to whoever read through all of that.

I have been dealing with Nissan during my whole build so they have told me a lot of things and as per nissans rules they are not allowed to rebuild motors they have to order a short block or long block which ever is needed. So they screwed something up and you really need to go back to them and take care of it. There are so many factors that play into that. If the piston rings were not set right it will burn oil. Just keep an eye on it. Just remember Nissan can't rebuild motors they have to order a new block per Nissan headquarters rules

You have to take it into nissan for consumption test. What I did (and this was bad on my part) was I did an oil change, reset all of the warnings and took it to the dearlshit. I SHOULD HAVE BABYSAT them because the stupid a$$ technician decided to ADD oil to my car when the pan of oil had no more than 250miles on it. They looked like a bunch of dumb arses when I chewed out the service rep when I told him that my car had 1qt too much oil in it and that how am i "making oil" when i am burning it? wtf? So, do an oil change on your car and fill it to the high dot on the dipstick. Babysit the technician until he is ready to pull the stick and DON'T take your eye off the car until it is done.

how about long is the procedure for an consumption test?
and what is it that they actually do?
i remember before they wouldn't touch my car because of the fact that it had non-nissan oil in it despite how much i tried to justify that redline oil is a premium oil with ester. so i had to cough up the dough for nissan oil and filter

It says in the owners manual that it doesnt matter what type of oil you use as long as it meets the cirteria required for our cars. Mobil 1, Redline, Castrol, and other oils as such are fine to use as long as you are changing your oil at the appropriate intervals. The procedure can be found under the TSB section here on the site.

they did fix the major problem i had before because it was a horrible loud rod knock. i was told by my mechanic friends that continuing to drive the car would've been asking to have a hole shot out the block.

thanks for all the helpful replies
i'm going to see if i can get a compression test done under warranty.
if anything, i will see if there's any further oil burning after the next oil change.
