I use the Hawk Performance Ceramic pads. They are good balance for me of high performance without the high levels of dust that you get with semi-metallic pads.

I have the Ferodo DS2500's, and they do very well. The do brake a lot more than OEM's or the Posi-Quiets, so you'll want to have a good wheel cleaner.

Thing is I just spent around $400 on those brakes, I don't want to spend another couple hundred or even thousands on brakes again. Man, I really like the car but it has given me nothing but troubles.

Front pads should be sufficient, although all four wheels would be better. The rears are typically going to be a little cheaper than the front pads as well. You should be able to find a set of the Centric Posi-Quiet somewhere in the neighborhood of $50. I got a set of Hawk Performance Ceramic front pads for <$100.

Rebedding the pads in is free. All you need is a big enough parking lot at 2 am. It sounds like there's still air in the lines. Spend thirty bucks for some Motul brake fluid and rebleed it. just because you watched them doesn't mean all the air is out unless you were right over his shoulder. That should take care of all of your issues.

How much more bite does the Akebono have over the base?

When I first picked up the car, the bite was pretty strong, but after a week it felt just like the family car I owned previously.
