I have to get this done. My car is p*ssing me off, if I hit some light traffic or do some stop-and-go city driving, the oil temps jump from 180

I have to get this done. My car is p*ssing me off, if I hit some light traffic or do some stop-and-go city driving, the oil temps jump from 180 to 220 - it's so annoying. I have an oil cooler and it's doing it's job, since the oil temps will never cross 220, but at 55-degree weather, it really shouldn't get that hot, especially that fast.
