I have a harness bar in my car (we're in Australia so I'm not sure about US classes andcategories), and I use my HANS with the OEM seat.

I did have to check the FIA HANS fitting guide to make sure that the shoulder belts are mounted correctly and the head-rest does not interfere with the operation of the HANS and all was good.

I'm working towards it, but with aftermarket seats. Got the harness bar from BGTV8 and have some seats on order.

Mike, are you sticking with the 370 or going to the spec 350 series?

I'd like to get one even just for HPDE, but I'm still a few steps away in terms of budget and build before I spend money on that.

I expect to be using one by my next track day if I can find someone to custom mount my seat. I also have a BGTV8 produced harness bar. :P

There are alternatives to HANS that do not require 5pt harnesses. I've never actually seen one in use but a little googling should lead you in the right direction.

I did another track day in my 370, and I really can't bear to part with it. Not gonna go spec 350 at this time, I love the 370 too much. I'm sure there is a NASA class that I can compete in it if I want to.

That right there is the key. HANS devices are only intended to be used with harnesses. Your standard factory seat belt will not allow the HANS device to function properly. If you're looking to use a head and neck restraint device without partnering it with 4-5 or 6 point harnesses, you'll want something more along these lines:
