You can disable the flash popping up on the 60D, even in Program mode.

I do the same thing except with Program mode. It's kinda like Auto, but with being able to shift the exposure quickly. I find that works best for me when a moment happens without me having time to think about the shot or set up for it.
If I have time to set up for the shot, definitely Manual.
Aperture priority is a great mode too, but if you are not using Auto ISO (and set at 100-400), you can find yourself with some shutter speeds that are too long without a tripod.
I choose my ISO based on what I'm going to do with the pictures. If its just for posting here or on Facebook, I leave the ISO at Auto. The noise just isn't an issue at Internet posting size/resolution.

Very easy fix with a layer mask in Photoshop or an area adjustment in Lr.

Well I just ordered the 60D and 430EX II. They'll be here tomorrow. Now I can not know what I'm doing with two cameras and a really bright flashy thingy.

I recommend pointing the bright flashing thing towards your face when you shoot

I read that you are supposed to bounce when you use the flash.

Yup, you can. You just mask an area with a brush and can adjust a specific area without effecting the rest of the image. You might even be able to pull those details out by just moving a slider and not having to apply a mask.

LR is about $150 and Aperture is about $100.

Just remember, flash reflects color, so as long as you're white, you should be fine bouncing it off your face....
