An ozone generator is often used to get smoke smells out after fires. It will remove cigarette smoke from interiors of cars. It SHOULD also be able to get rid of your coffee smell. I'd give it a shot.

Have the person who spilled the coffee buy you a pair of the Recaro seats from the 2015 Nismo. It's the only fair solution.
