I used to just wait until the needle started to move, but then I installed my oil pressure gauge. The oil pressures don't start to drop to the lower operating pressures until 180+. Cooler than that, the pressures are in the 100-105 PSI range when you're around 2-3k RPM. That was enough to make me warm her up to 180F before getting sporty with my driving.

How accurate is the gauge anyways? For example the other day at lunch i went to the local grocery store. It is about 2 miles down the road. By the time i got there, the needle just started to move. Parked, came out 10 mins later and the gauge was then up to 140 or 160.... it jumped a lot while parked which makes me think its slow to move in general...

Same thing happens when you drive for awhile and you get to 200 degrees and park for a bit and come out and the temp is 220+.

Mine is usually a 5-8 minute warm up, which usually the oil temp gauge is just about to start to move. By the time I am out of my neighborhood it is around 160.
Honestly, you really do not need to wait very long, a good 60 second warm up is all you really need just do not go bouncing it off the rev limiter and you are fine.

Since the factory temp gauge reads engine oil as it exits the Oil Filter, you are actually reading the oil temp coming directly from the oil cooler. The flow pattern for engine oil on a 370z is as follows: Pick Up Tube --> Oil Pump --> Oil Filter IN --> Oil Filter Out --> Oil Cooler --> Engine Block (Temp and Pressure gauges are located in this galley) The temp you are reading is actually what is going back INTO the engine (which is perfect). By the time it cycles thru the engine, you can expect to see engine temps in 200 degree range. As for the thermostatic sandwich plate, it will bypass roughly 80% of the oil back into the engine when too cold. It will still flow ~ 20% thru the oil cooler (preventing air pockets from forming). To get a TRUE Oil Temp reading, you would need to install an inline oil temp gauge coming out from the Thermostatic Sandwich plate before the oil cooler. " Doesnt that contradict itself?

I think what it is saying is if you want oil temps of 200, you would want that kind of temp reading on oil coming out of the engine (meaning oil in the engine is at 200). The 370z oil temps are read before going in the engine though. So if the guage shows 180 degrees, then real oil temps are probably 200
EDIT for those new to the discussion this applies to those with an oil cooler only.

They shouldn't be. Your set up doesn't allow the oil to cool off enough between when it exits the engine block and comes back in
