You say that...But my little test was done at a detailfest with a lot of "top notch, top dollar" detailers (I am also friends with a few employees there). Sealants and waxes add a very MINIMAL gloss or shine difference. Can I tell if someone has a LSP on their car? It depends on the environment more than anything. With overcast, I highly doubt you could tell the difference between werkstatt and NXT.

Pictures are the WORST way to show off a good detail/shine. The majority of people (and their cameras) will focus on the object in reflection which gives the appearance of a flawless, perfect detail. On a darker car, that can hide A LOT. I see detailers trying to promote their services do this all the time.

But hey, I've only been doing this over 10 years, trying every product I can get my hands on (friends in the industry at a MAJOR reseller have definitely helped this), detailed multiple cars, so what do I know? At the end of the day, you find what you like and what works for you and you use it, but don't be surprised if others do not share your same opinion.
