Oil Temp Sensor?

Also forgot to add. I was recommended to run either 10w-40 or 0w-40 by the first owner. It's got 10w40 in it now and this is the first cold season

It's got 10w40 in it now and this is the first cold season I've had with the car.

I thought maybe certain parts of the engine weren't getting lubricated as well (with the thicker oil) and were getting hot on those accelerations. Then the oil would flow over them, spike the gauge, and then fall as the oil cooled.

But these spikes lasted only a second, strait up and strait down and I wouldn't have thought they could really rise and fall that quickly.
