At what point do you stop because of high temperatures?

That is definitely not right... With oil cooler your temps should not go that any high. My Z will sit in traffic in FL and the oil temp stays highest

How many rows of oil cooler you have? jC is correct you might want to check your fans if they are running normal speed. They might not be functioning.

To top it off you even have an extended oil pan..maybe your oil cooler lines are clogged?
