There are numerous threads on this as well as solutions for overcooling in the winter. From Mocal (the most commonly used thermostat):

Interesting, so even with a "good" thermostatic, it'll still flow oil through the cooler?

Is mocal considered one of the most reliable/best of the thermostatic plates?
