How to find out if your car is tuned?

I was thinking of calling a local uprev pro tuner and see what he suggested. I was thinking of getting the cable and just have them dyno/re tune. i live in Massachusetts and i bought the car from an auction in Dallas Texas. Your lucky you could figure out what 2 of your maps were, i don't have a valet or an anti theft map... so im kinda screwed.
