Yeah, wrapping the entire dash and the full door like they do in the C7 would easily add another grand to the base price.
In reality, though, it's no big deal. You literally have to reach up over the dash to feel any hard plastic, and if you've sat in the new Camaro you'll know you really have to put in an effort to reach up over the dash.
