Here's my list:

1990 Oldsmobile Cutlass Ciera (aka "The Tank")
1995 Ford Ranger - 5spd
2005.5 VW Jetta TDI - 5spd
2008 Toyota Prius

Used to miss the Jetta until I got the Z...nothing like driving a manual! Jetta had everything I wanted at the time - turbo + great gas mileage. Too bad the damn thing fell apart at 54k miles (of course, 4k outside the warranty). The Prius was great on gas, and had a ton of room for cargo, but was so incredibly boring to drive
