Once the frame is bent, legally they will have to salvage it. That was the case for my 08 Nismo, damage wasn't as bad as yours and airbags didn't deploy.

Most insurers total at around 80% but not all. My barber bought a brand new bmw m3 a few years back with in a week a drunk driver rear ended him at ~50mph when he was stopped at a red, was about $38-39k of damage insurance wouldn't total it because they would have to pay him out some additional 8k or so.
