Can she handle the Vulcan? I honestly don't remember the weight and seat height, or her height. I just know very few bikes were suitable for me to learn on.

She's 5'9" - plenty for the Vulcan. Also, it only weighs about 480 wet. It's one of the lightest cruisers out there, save for a little Honda Rebel or something...

She's gotten on it before, and she can flat foot it with both feet.

You are more of a challenge, and really, you're almost relegated to a smaller sport bike. You can get a low-rise seat, platform shoes, and drop the suspension a little usually.

Weight was a concern for me as well. The Suzuki is 330 lbs. wet. The only lighter bikes are dual sports, and the seat height for all of those is far beyond what I can currently manage.
