Anyone got anything good going on this Memorial Day? Waiting for some cloud cover to break up and I'll be firing up the pit.
We're going experimental here today. I've somehow never done a brisket before, so there's a small one in my future as well as a whole wild piglet I shot a few weeks back. It's my first whole hog, so I went with the smallest one and I'll turn it all into pulled pork. Not a lot of ribs or belly on these little guys, just all shoulders and hams. In case I screw the pooch with the new stuff I'm trying, I'll toss a few racks of ribs and some sausages in. Pics to follow.
