Cut into 1/4 in slices. Marinate in Italian dressing. Make a boat out of aluminum foil. Put zucchini in the foil with chopped garlic, butter and seasoning. I use my rib rub, but anything is good. Seal up the foil, throw it on the grill for at least two hours. I like the zucchini kinda mushy, so I do 3.

Perfect! Will try this out. I do use my rubs on lots of other veggies. And I hear you on kinda mushy, not total mush but I like the flesh of the zuke soft.
The fried zuke rounds are about 1/4 slices and get a nice tempora type batter and fried until the centers are just soft

Happy Labor Day weekend everyone

The memorial service on Friday for Steve McGonigle, Dallas Morning News reporter, was the most entertaining I've ever experienced. Three of his colleagues and his son (my brother-in-law) spoke, and some of the stories were pretty amazing. The work of his and colleague Ed Timms was quoted by Justice Thurgood Marshall in a landmark Supreme Court case in the late 80s helping to eliminate corruption in the justice system with regard to racism and jury rigging. It was a wonderful celebration of his life.

Yesterday was the opening football game for The University of Texas Longhorn Football Team. Despite a lack luster first half where New Mexico State scored the first touchdown of the game late in the second quarter, Texas managed to rip off two quick scores for a 14-7 halftime lead. We picked that momentum right back up and scored touchdowns on our first three possessions of the second half in route to a 56-7 win and a school record for total yards in a single game. It was an incredible balance of 356 passing and 359 rushing yards for a 715 yard total.

Football is back!


Heading to lunch now to celebrate my other brother-in-law's birthday. Then we're headed to a friend's pool party. Will have to and catch up later
