I used regular Russet, I think they use a specific type though, I cant remember which one. Canola oil, and cut to the same size as Mcdonalds fries.
Soak in cold water for 5 minutes after cutting, boil 1/2 cup Corn syrup and 1/2 cup of sugar in 12 cups of water in a pot, turn off heat when its boiling, soak cut fries in the pot for 10 minutes. Pat dry and put fries in the freezer for 15 minutes. Fry in oil for 2 minutes, place on a tray and allow to cool down. Fry again for 7-9 miutes depending on crispy preference. ![]()
