If you live in climates that get some cold weather then you need the thermo plate,again it will partilly flow oil to the cooler until 180 deg then it opens up fully.

It doesn't take longer to warm up b/c most of the flow by passes the cooler till 180 deg.

You can use the Art pipes if you want to ,Sam told me to use stock cats b/c they keep some back pressure in the exhaust and these engines have a lot of overlap, the extra pressure in the exhaust will aid in cylinder filling hence more power.

Looks like I'll go with the thermostat

Makes sense on the overlap. I'll probably swap back to stock cats and use the FI exhaust
