I run redline and change oil around 3k miles... i'd rather change oil way too early then even a little too late. It's not that big of an expense to warrant getting every last bit of life out of the oil.
If it's true that you can run redline 5k or even 7.5k miles safely then by all means; go for it. I'll stick to playing it safe and sticking to the owners manual. That way i can feel comfortable. I run Mobil 1 Extended Performance in my truck that gets driven once or twice a week. and I have no problem going 10k miles between changes. but i dont care much about the truck like i do the Z. I'm not trying to state facts, or change anyone's opinions, just stating mine.
