So which would be better for cool climate but often track time, 19 or 25? I went to the track last night and my 2nd last lap of each run

So which would be better for cool climate but often track time, 19 or 25? I went to the track last night and my 2nd last lap of each run i went into limp mode cuz i hit 140*C. Had to keep the car in 3rd the whole time but wasnt getting the power i wanted out of the turns.
