I havent seen custom fiberglass enclosures from any professional (actual storefront) installers that I considered cheap. They are doing it to make a profit. T Think about something in your life that you are not good at, how much would you pay to have someone else do it, and feel confident that it is done right.

The shops ive worked at, and now work with, 700 for that box is about right. To do a 'glass box right and have it look good takes time, and time is money. No offense but i've seen some of your 'glass work, it may have been early while you were learning, but i'm sure your box would have takin a lot more time and would not have looked this good.

You need to understand how this person earns their living and supports their family. Of the $700 installers typically get 40%, 38 in some cases. That's $280 before taxes and around $250 after taxes for something that probably took the better part of a day if not longer. This is provided that none of that $700 went toward materials. So yes you could do it cheaper but a retail installer has to charge prices that ensure they still get paid fairly. If we were to charge your price to do this we spend a day building something and take home $20. That being said stop assuming all shops are out to get people and that we are simply trying to make a living.
