Given that its a 40th, theoretically a collector's item, and the color is unique to that special version, I'd go with Nissan factory paint and possibly see if they will spray an extra coat or two of clear.
Even if another shop does it, in theory all you need is the paint code. Or... get that opticoat stuff on once the paint is fully dry. After going through the trouble to restore it to new, might as well protect the hell out of it. Otherwise, I'd say just go for the best you+insurance can afford in whatever color you like.
