It isn't disappearing, it just gets lower in the reservoir due to pad wear, i.e. more of it is now resting in the calipers. The sensor for the low brake fluid is a little overly sensitive, even if the fluid is between the min and max marks it will get triggered during acceleration. You have to keep it topped off near the max mark.
