What type of oil and how old it is can be a factor as well. I find that the older the oil is the faster the temps rise and stay there longer. I only use royal purple with their synthetic filter and a 34 row oil cooler and never get above 200 even on a hot day setting in traffic (also change it every 5000). but when I get on the freeway it drops really quick back down to 180. Unless you are going with FI you should only need a small oil cooler to control the temps. Also if you are not afraid of road debree or bumps, you can remove the under shroud and the wind blowing under the car will cool it down quickly. I did this before the oil cooler and it kept the temps around 190-220 at freeway speeds.
