What maybe hapening is that as the reving of the motor slows because your at a light or in slow traffic the engine is able to bring the Oil temp down a bit since your not pushing it. so I think thats the reall reason and not the Ac.
Go for a drive with the A/C on , set it at 68 degrees! 10 mile drive minimal/limit! Observe you temps.! Post the results!
