Home made bacon. Maple, peppered and just brined.

Smoked chickens. Brined over night in kosher salt, onion and garlic juice. Injected with butter and random seasoning. One is rotisserie style with Italian seasons. The other is done with an all-purpose rub from the local meat market.

Gotta go light on the sauce. Have never been a fan of smothering stuff. Distracts from the smokiness and rub. As for bacon. It reminded me of make those paper place-mats in kindergarten.

Left out I stuff the cavity with orange/lemon/garlic cloves and bay leaves.
