After much discussion (in my head) we have decided to start a damn cooking thread since a lot of us have been posting so much damn food lately. Time to get hungry!

This was hickory and apple smoked St. Louis ribs in an apple bbq sauce with honey. Hickory smoked brisket with a pecan rub. Hickory smoked pork shoulder in every seasoning I could find.

Homemade lasagna that i think took me around 8 hours to make. Homemade lasagna noodles using semolina and 00 flour. Hand made Italian meatballs (add ALL the breadcrumbs). Hand made sweet Italian sausage. Chunks of dry ricotta and aged parm regiano cheeses. Slow cooked (8+ hrs) puttanesca sauce. Make sure to always add tons of anchovies, garlic, and capers to it. Richness is an understatement.

Some quick and dirty sushi rolls. Finding raw fish in my area that I am comfortable enough to eat is very difficult. Hence the fake crab.

Banged out these suckers in under a half hr out of sheer boredom. Stuffed with ricotta and sausage. Used bread flour and egg yolks since it was all I had on hand.

Sous vide sirloin with a pan sauce consisting of grain mustard, red wine, balsamic reduction, way to much butter, some flour, and malt vinegar. Side of roasted cauliflower in a cheese batter and topped with tapatio.

Smoked chickens. Brined over night in kosher salt, onion and garlic juice. Injected with butter and random seasoning. One is rotisserie style with Italian seasons. The other is done with an all-purpose rub from the local meat market.

Gotta go light on the sauce. Have never been a fan of smothering stuff. Distracts from the smokiness and rub. As for bacon. It reminded me of make those paper place-mats in kindergarten.
