I notice you never say anything about your arteries. The veins just take used (deoxygenated) blood back to the lungs and heart. The arteries are what provide fresh, oxygenated blood to all your muscles

I assume they are in good shape as you take good care of yourself

Sadly, the only real good meat is the breast. The legs and thighs are super tough from them being used all the time in the wild. They do make really good soup stock though.

I have a farm raised turkey in the freezer awaiting the stuffing.

So they're like veal ... they need to be tied up so they can't move so the meat stays extra tender
