You can see variation on the same day too -- intake air heats up, engine oil heats up, etc.
So long as you are looking at SAE corrected numbers on the same type of dyno (ideally a dynojet, as they are all calibrated the same), the comparison will be meaningful and informative. Do you have a graph of the runs? What kind of dyno?
