Good discussion. I'm thinking of a seibon ts hood. But I worry about water getting into the engine compartment and rotting or rusting things

Exactly my concerns also, its just theirs a hood on the car for a reason, probably to keep water and other harmful things out of the engine.

Some cars like Subies and Evo's have detachable panels that attach under the vents... I'm not sure Seibon does this for the 370z models, but I dunno who does make them?

Not a noob question, since cold water is bad for a hot running engine, specially for the alternator. Some people seal them and paint the grill black.

Well, I think we have to understand that driving a car with hood vents in the rain isn't like taking a couple 5-gallon buckets of water and dumping them in the engine bay. It's pretty warm on the engine ... the minimal amount of rain that gets in evaporates relatively quickly. Also, I can't speak for specific hoods, but many of the aftermarket ones I have looked at in the past (for other cars) have some form of water management system.

Although, it will get much dirtier under there.

Some hoods come with a shield you can remove to keep the water out? But this all depends on how aggressive the hood is.

Quality is good on the VIS and we chose it over the hotwheels similar hood. For me, it was a functional decision to make sure my engine bay stayed cool after adding the turbos. I wasnt expecting it to look as good as it does.

I'm too lazy to look it up (and by too busy, I mean I'm watching porn), but I'm 99% sure the authentic seibon is manufactured with rain guards.
