I am installing a VQ37VHR in a 1974 Datsun Z. I am considering twin-turboing the motor. I am curious if anyone sells a head unit or LCD display that could display all the engine information (especially the Turbo stuff - boost / air/fuel etc)

Check out Racepak and maybe even Autometer, I remember something from SEMA that was similar to the racepak piece.

Hr heads and an aftermarket ecu you wont regret it for something like that, the vhr and having to use the factory ecu and getting that to work to run the engine is a needless pain in the arse.

That will probably require a pro-tuner uprev cable/license and then additional meters/datalogging software for boost.
