Default Tuning Problem

So I went down to a local performance shop to ask about getting a tune done to my car. It's a 2009 base with full bolt ons, plus the AAM intake manifold with a direct port nitrous set up for a 100 shot. I'll be using Uprev for this. They told me that they wouldn't need to use a dyno to tune, and that make me balk a bit. I don't actually know much about tuning, but from everything I've read here, everybody is getting dyno tuned. I feel like I should jump ship here and look around for somebody else. I would like some input from people who know more about this than me. Thanks!

Thought the AAM intake manifold was still in pre-order. If it really is the manifold and not just their CAI,

Apologies on the manifold, I'm preordering, it isn't installed yet, nor do I have it. Land thanks on the confirmation to try else where. I don't know how they were going to set up different maps without having the car on a dyno.
