So i got a Griots garage DA polisher and 10 pads for christmas (ordered from you guys).

Can you suggest a good polish, sealant, and wax for me to start off with? Anything else I might need?

sure thing what condition is the paint in?

a good sealant by hand would be Sonax Polymer Net Shield.

something to use with the machine with an Uber Black Pad - Menzerna Power Lock or Auto Finesse Power Seal

for a polish you can use Menzerna SF4000 or Sonax Perfect Finish 4/6 with an Uber Green Pad

if the car has some deeper scratches/swirls imperfections you may need Menzerna FG400 or Meg's M101 with an Uber Yellow Pad or Uber MF Cutting Pad

The paint looks good right now, I was having it detailed twice a month by a mobile detailer but after he left swirls in my paint a few times I decided to start doing it myself again. I used to be a detailer (10+ years ago) so im still familiar with the concepts, but most of the supplies are different.

Is it still common to use a polymer type sealant (the Menzerna looks interesting) and follow it up with a natural wax?

you can use Menzerna Power Lock but since sealants have improved over the years you really don't need to top a sealant these days.
