For example if it is 70 degrees outside, the temperature knob is set to 60 degrees and the two outside knobs are set to "auto" then the A/C compressor (center orange light on left knob) should come on automatically with me having to press the knob, correct?

Thanks
Yes.

On my two-month-old 2011, whenever I twist the fan speed dial to AUTO, the A/C light always comes on automatically. It doesn't seem to matter what the exterior temperature is (I've experienced 15F-70F so far) or where I've set the desired interior temp (usually around 70), the A/C light illuminates. If I wanted AUTO with no A/C, I'd have to manually tap the A/C button to disable it.

AFAIK, this is the normal & expected behavior. The Z is my first Nissan, but other cars I've owned with fully-automatic climate control systems (a Saab, couple of Audis, and a Subaru) have behaved this same way. When you command 'Auto', the car uses A/C unless you manually override it; for cooling in the summer, and for drying & anti-fogging in the winter.
