It all depends on how crazy you are. Older cars require more care. Avoid ethanol fuel if possible.
Flat spots don't happen much with modern tires, internal corrosion takes a long time to happen on non cast iron block engines. Depending on humidity get a big bag of silica gel and make sure you clean out the engine bay and interior of any food or vegetation to prevent pests and insects from making it their winter home.
Oh and mice/rodents love rubber parts keep your place free of them.
