First off I know how you feel, Theres a TON of information to consider to get the right look whether that be with the low pro tires or the beefier setup. I'm in the same boat as im pretty sure im ordering Work wheels today. I will be going with a 19x9.5+15, 19x11+10. The first pic doesn't seem to have stretched tires just a smaller sidewall. As far as how far the wheel will be to the fender is where wheels width and offsets come into play. Some of the stickied threads have a ton of examples as to what you can do so do some searching in there. One last thing.. did you plan on buying wheels off Ebay? I've never done it but ionno if I would take that risk. Look around some of the vendors as there are some pretty affordable wheels on there from much more reputable dealers than ebay and Good luck
